A top restaurateur is encouraging the North West to waste not, want not this Christmas.
In a bid to combat excess food wastage over the festive period, Director of Rumi by Bukhara Faisal Patel has devised a selection of innovative recipes using leftover Christmas dinner.
A recent study has found that British households will throw away the equivalent of 4.2 million Christmas dinners, amounting to £64 million of wasted food.
Faisal said: “When we read about the shocking figures regarding food that gets wasted at Christmas time, we were certainly surprised. This is why Rumi by Bukhara is encouraging its diners to re-use their left over Christmas food to create unique and interesting new dishes.
“Perhaps most shocking of all, statistics indicate that 263,000 turkeys across the UK go to waste every year. Our chefs have been working hard to create a selection of delicious leftover Turkey recipes, all with an Indian twist, which are perfect for serving up on the days following December 25.”
Rumi by Bukhara suggests a starter of Turkey Pakoras, using cooked turkey, gram flour and spices to create a delicious fried snack similar to chicken nuggets. For a main course, families can enjoy a hearty Turkey Jalfrezi curry using leftover strips of chilli and garlic infused turkey.
Rumi by Bukhara has also created an offering for those with a sweet tooth, using surplus bread and butter to devise a delicious Shahi Tukra pudding.
Faisal added: “Shahi Tukra is a great leftover dish as it only takes a short time to prepare and makes for the perfect accompaniment to follow a delicious main course.
“With so much food left over in every household during the festive season, it’s the perfect opportunity to get creative with ingredients and to cook up classic Indian style dishes using traditional yuletide cuisine. So many flavoursome dishes can be adapted to incorporate food that would otherwise be going to waste, and we hope that we can start a trend that will be continued long after Christmas has passed.”
